Laurel Park Bistro brings together history, family legacy, and community in an inviting way.

Once a charming home built by a soldier who returned to the Valley following WWII, Laurel Park Bistro’s building is quite fitting for Navy veteran and head chef, Diego Benitez. The home was moved to its current location in order to be saved from demolition, at which point it became a family-owned beauty salon. After operating as a salon for decades, the building was retrofitted in July 2018 with a professional kitchen where Culinary Institute of America grad Benitez now builds dishes from scratch using traditional French technique. In the dining room you can see an homage to the beauty salon owned by his mother for many years. The name Laurel Park Bistro was chosen to commemorate the restaurant’s location at the entrance of a neighborhood known as the Laurel Park Addition, planned and built by one of Harlingen’s notable architects, John G. York. York developed a reputation for being inventive, dramatic, and modern, a tradition Chef Benitez hopes to carry on with his food.
